Veggies Dinner

Ingredients: 2 corncobs/ 2 zucchinis/ 80g of frozen green beans/ 50gr frozen peas/ 12 cherry tomatoes/ 4 tbsp olive oil/ 1 tbsp oregano/ 1 tbsp thyme/ 2 garlic cloves/ juice of half a lemon/ salt and pepper

After the amazing recipe from Ella delicious we wanted to do another version.We hope you will like it ! 🙂

2 pers:

  • 4 tablespoons olive oil
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
  • 2 garlic cloves
  • 2 zucchinis, very finely sliced
  • 12 cherry tomatoes
  • juice of 1/2 lemon
  • 50g frozen peas
  • 80g frozen green beans
  • 2 corncobs

 

As per the recipe from Ella you need to first pour the olive oil and the oregano+thyme+ garlic (finely sliced) +salt & pepper into a frying pan. Leave it on the heat for 2 minutes to allow the fragrance to develop.

Add the zucchinis+ peas+ beans+ tomatoes and lemon juice . Leave it to cook for 15/20 minutes.

During this time, in an other frying pan add 4 tbsp of olive oil and cook the corn cobs, adding salt and pepper, for 15 minutes. Keep turning them every 3/4 minutes.

PS: You can add feta and steam some salmon also with this dish !

Después de probar la receta de Ella delicious y ver que era tan buena y fácil, hemos querido hacer una versión nueva. Esperamos que os guste! 🙂 

2 personas:

  • 4 cucharadas de aceite de oliva
  • 1 cucharada de orégano
  • 1 cucharada de tomillo
  • 2 dientes de ajo
  • 2 calabacines (cortados finitos)
  • 12 tomates cherry
  • zumo de 1/2 limón 
  • 50gr de guisantes congelados
  • 80gr de judías verdes congeladas
  • 2 mazorcas de maíz

 

Igual que en la receta de Ella delicious, pon aceite de oliva, orégano, tomillo, ajo, sal y pimienta en la sartén. Cocínalo durante 2 minutos. 

Añade los calabacines, los guisantes, las judías, los tomates y el zumo de limón y deja que se cueza todo durante 15-20minutos. 

En otra sartén, pon 4 cucharadas de aceite de olivas y cocina la mazorca de maíz. Remuévelo cada 15-20 minutos, más o menos. 

Una vez todo esté cocido, puedes añadir un poco de queso feta por encima, pero es opcional…! 😉
