Fresh rocket leaves pesto

Ingredients
- 100gr rocket leaves
- 1 garlic clove
- 100ml olive oil
- 30gr almond
- 10ml lemon juice
- 200g pasta
- 30gr cherry tomatoes
- 10gr parmesano
- salt&pepper
- seeds(optional)
First, put inside of your thermomix or blender the garlic clove and almonds. Crush on a high speed. (speed 5 or 6). Once it’s done, add the rocket leaves, olive oil, lemon juice and salt & pepper. Mix everything again on a high speed (speed 7or 8) . Repeat this twice so you get a real smooth texture.
In a pot, cook the pasta;
During this time, cut the tomatoes and parmesan into small pieces.
When the pasta is done, you just have to mix everything together !
At the end you can add a fews seeds on the top. 🙂
