Vegetarian Quiche.
For 4-6 persons:
Ingredients for the dough:
- 300gr wheat flour
- 120ml olive oil
- 120ml water
- A little bit of salt
Put all the ingredients in the blender and mix them at medium speed for about 2 or 3 minutes, until a dough forms.
If you see that the dough is not perfect, you can add a little flour or water without any problem.
When it is ready roll it out with the aid of a roller, and put it in the mold.
Finally, put some holes into the dough with a fork and set aside to continue later.
Ingredients for quiche:
- 1 leek
- 1/2 red pepper
- 1/2 zucchini
- 3 eggs
- 200ml Amandin Rice Cream
- Some grated emmental cheese
- A pinch of salt and pepper
Take the leek and red pepper and cut it into pieces. Put everything in the mold onto of where the dough is.
In a bowl, mix the eggs, the cream of rice, the salt and the pepper and pour it on top of the vegetables.
Cut the zucchini into very thin slices and place the pieces in a circular way over the dough, adding a little emmental over the top.
Bake at 180/190 ° C for approximately 40 minutes, or until the egg has set and the surface of the quiche is slightly browned.
