Veggie black rice

Ingredients:
- 400gr black rice
- 1 clove of garlic
- 1/2 onion
- 2 large tomatoes
- 1 yellow pepper
- 1 zucchini
- 8 shiitake mushrooms
- 5 mushrooms
- 20 g olive oil
- soy sauce
- A handful of peanuts
- A little parsley
- 1/2 lime juice
- salt and pepper.
In a saucepan, boil salted water. Add the black rice to the boiling water. (for help look at the info on the package for how long it need to be cooked).
Cut all vegetables into small pieces.
Heat the olive oil gradually in the frying pan.
Meanwhile, cut the clove of garlic and half onion.
Once the oil is hot, add the garlic and onion and fry them until they are golden.
Then add all the rest of the veggies. Cook over medium heat for about 20 minutes. Add a bit of salt and pepper.
After all done place the cooked rice with the vegetables in a dish for serving and season with some soy sauce, lemon juice, parsley and crushed peanuts.
