Vegetarian pasta with shiitake, peas, zucchini and corn
- 1/2 onion.
- 1 zucchini.
- 100g frozen corn.
- 100g frozen peas.
- 20 shiitake mushrooms.
- 800ml water.
- 1 cube of vegetable stock.
- 250g of oats shape pasta (in french: pate d’avoine, don’t worry if you can’t find this shape just take small pasta).
- 60ml olive oil.
- salt and pepper.
First, put the cube of vegetable stock with to the water in a saucepan.
Start to warm the water. Mix it with a spoon until it starts to boil.
After this, cut the onion into small pieces and put it into another warm pan with some olive oil.
When the onion start to be brownish, add the frozen peas and corn.
Cook it slowly for ~5min.
During that time, clean and cut the shiitake mushrooms into slices and add it to the onions.
Add the uncooked pasta into the pan with some salt and pepper.
Mix slowly everything together with a wood spoon for 3min then add the vegetable stock and let the pasta cook. Cook it more or less for 15-20 min. If you are not sure, check the pasta packaging for the cook times.
Since al dente means “to the tooth”, I always taste it and see. 😊
