Pudding cake with strawberries and rhubarb

 

For 8 persons

Ingredients:

  • 75g almond flour.
  • 160g flour.
  • 230ml almond milk with vanilla flavor.
  • 70g agave syrup.
  • 100ml coco oil.(melted)
  • 1 egg.
  • 200g of cuted rhubarb-strawberries mix.
  • 40g cane sugar.
  • 1/2 pack of baking powder.
  • pinch of salt.
  • brown sugar (optional).
  • almond slices (optional).

 

Turn on your oven to 180°c.

Add all the ingredients except rhubarb-strawberries mix into your blender.

Mix everything in high speed.

Then add the rhubarb-strawberries mixture.

Mix it again but this time slowly.

Grease the cake-tin with coco oil and pour the mixture inside.

On the top add some almond slices and brown sugar.

Cook it in the oven for 30-40min, the top has to be golden brown.

And voila ! ?.

    • When I went to my go-to grocery store I saw some rhubarb and they don’t have it often so I couldn’t resist to buy few.
      At home we are a big fan of the strawberries-rhubarb combo. It’s a classic but so delicious ! ?
