Spaghetti with white beans, carrots and spinach
For 2 peoples
- 50 ml olive oil.
- 1 clove of garlic.
- 2 carrots.
- 2 peeled tomatoes.
- 300g white beans Casa Amella. (Precooked).
- 2 big handful of fresh spinach.
- 3 tablespoons of lemon juice.
- 2 teaspoons of paprika.
- 3 tablespoons pine nuts.
- salt and pepper.
- 250g spaghetti Casa Amella
- 2L of salted water.
- Parmesan (optional)
Start to heat the salted water in a pan.
Add the pasta to boiling water and watch the cooking time on the package.
After that wash and cut the carrots. Then cut the clove of garlic into small pieces.
Heat olive oil in low temperature for 2min.
Add garlic, salt, pepper, paprika and pieces of carrots.
Once its golden brown, add the peeled tomatoes.
Cook it for 5min then add spinach, white beans and the pre-cooked spaghetti.
Mix and add salt, pepper, lemon juice and pine nuts.
Let it cool down for 2-3 minutes.
Serve it with a little parmesan and voila! 🙂
