Green toast with soy and peas
For 4 people:
Ingredients:
- 130g of pre-cooked green soybeans
- 100g frozen peas
- 100g of ricotta
- 2 tablespoons honey
- 3 garlic cloves
- 3 tablespoons water
- 50ml olive oil
- zest of 1/2 a lemon
- slices of 1/2 a lemon
- juice from 1/2 a lemon
- 10 mint leaves
- salt and pepper
Start with cutting the garlic into small pieces.
In a saucepan, heat the honey until it turns golden brown. Add garlic and water.
Mix with a wooden spoon for 3-4 minutes.
Put the garlic cloves, the rest of the honey and ricotta into a bowl and mix.
Turn off the heat, add in the saucepan: olive oil, zest, slices, and juice of 1/2 a lemon.
Remove and cool down.
In your blender, at medium speed for around 3 minutes, grind the soybeans, the peas, and 5 mint leaves.
Now the best way how to serve it would be with sliced bread.
Toast the bread and cover it with ricotta and the soy/peas mixtures.
Add the lemon juice, salt, pepper and the rest of the mint leaves (previously cut them into the small pieces).
If you do not have bread do not hesitate to eat it with rice or wheat pasta. 🙂
You can also add some nuts on it, they taste delicious together.
