Lentils with sun-dried tomatoes and sweet potatoes
For 4 people
- 460g cooked lentils from Casa Amella
- 1 sweet potato
- 1 onion
- 1 garlic clove
- 6 sun-dried tomatoes
- 2 tablespoons dried oregano
- 200ml water
- 50ml olive oil
- zest of 1/2 a lemon
- salt and pepper
In a hot saucepan put the oil and zest of 1/2 a lemon.
Chop the garlic and onion into small pieces. Start heating them in the saucepan with oregano, salt and pepper.
During that, peel and cut the sweet potato into pieces. Add them to the already cooking ingredients.
Mix everything and cook more or less for 5 minutes. Now chop the sun-dried tomatoes into small pieces and put them in the saucepan.
Add the water and leave to cook for 10-15 minutes. The sweet potato has to get soft.
Once it’s done, put the lentils and stir slowly.
Let it to heat for 5 more minutes until everything is hot.
