Banana bread with nuts and turmeric
For 4 people
- 140g mixed nuts: hazelnuts, pecans, cashew …
- 250g of bananas
- 70g chocolate chips
- 2 eggs
- 60g agave syrup
- 40g brown sugar
- 2 tablespoons honey
- 270g wheat flour
- 3 teaspoons yeast
- 2 teaspoons turmeric powder from the brand El Granero Integral
- 140ml vanilla flavored almond milk
- 1 tablespoon water
- 70ml sunflower oil
- 1 teaspoon salt
Heat the oven to 180 ° C.
Put the mix of the nuts into your blender to grind everything. (We do not want to make a powder, but small pieces)
Put the pieces into a small bowl with honey, water, and Curcuma. Stir everything.
Lay the mixture on a baking tray, cover it previously with the baking paper.
Bake it for 10-15 minutes and stir it in every 5 minutes.
Once the time has passed, let it cool down and separate the mixture with your hands.
Put into the blender bananas, eggs, agave syrup, brown sugar, wheat flour, yeast, almond milk, sunflower oil, and salt.
Mix everything on medium-high speed. We want to get a smooth dough.
After that add the nuts and chocolate chips.
Mix everything again, but this time slowly.
In a metal mold covered with baking paper put the dough and bake for 40-60 minutes, more or less.
You can check if the cake is ready by sticking a fork or a chopstick in the center of the cake. If it comes out clean, it means the cake is ready to eat! 🙂
