Fig, nectarine and feta salad
For 4 people
Ingredients:
- 9 figs
- 3 nectarines
- 100g rocket salad
- 2 tablespoons honey
- 1 garlic clove
- 80ml olive oil
- 3 tablespoons water
- 3 tablespoons apple cider vinegar
- 200g quinoa
- 2 tablespoons oregano
- 10g feta
- salt and pepper
Start with heating some water in a pot. When the water is boiling, add the quinoa and let it cook for a few minutes (look at the package to know the exact cooking time).
Clean and cut the figs in two.
Do the same with the nectarines but cut them into slices.
In a frying pan heat the honey, when it starts to get the light brown color add the figs, cut side down. When they start to be juicy turn them on the other side. Count around 5 minutes for each side.
Put them on a plate.
Do the same with the nectarines (without adding honey). Just add some water so they would not stick.
Put the slices on a plate.
Turn off the heat and put on the frying pan the oil, vinegar, and garlic (previously cut into small pieces).
With a wooden spoon, start to mix and remove the honey from the pan.
Pour everything into a bowl. Add salt and pepper and mix. Now you have a vinaigrette/ salad dressing.
In a bowl, put the rocket salad, figs, nectarines, oregano, feta, and vinaigrette.
Accompany this salad with quinoa.
