Curry with coconut milk, sweet potato, and cabbage
For 3-4 people
Ingredients:
- 50ml sunflower oil
- 1/2 onion
- zest of 1/2 a lime
- 1/2 cabbage
- 1 sweet potato
- 1l coconut milk
- 1 lime BIO
- 2 tablespoons or more (depends on taste :)) curry
- salt and pepper
Start with chopping the onion, cabbage, and sweet potato into the pieces. (The onion and the sweet potato have to be peeled previously, hahaha- just in case :p)
In a medium saucepan, put the sunflower oil and the lime zest and heat over medium heat for 2-4 minutes.
Add the cabbage and the sweet potatoes. Mix and heat for 5-10 minutes. Do not hesitate to stir time to time.
If it sticks to the pan add some water but not much because in beginning the cabbage also gives out the water.
Add the coconut milk and the curry, mix.
Cut the lime in two. Add 1/2 a lime juice in the prepared mixture and cut the other half into the pieces.
Now put the pieces inside.
Let everything to heat for 15-20 more minutes.
Add the salt and pepper according to your taste and you’re done. 🙂
We eat it with basmati rice. NIAM
