CARROT CAKE LIKE PANCAKES
For 4 people
- 100 gr fresh carrots
- 60 gr pecan nut
- 200 gr wheat flour
- 300 ml almond milk
- 10 gr packing powder (not bio)
- 3 eggs
- 30 gr brown sugar
- 1,5 tablespoons cinnamon
In your blender grind the pecan nuts, and set them aside.
Next, peel the carrots, grind them until you get small pieces and put them aside as well.
Then mix the flour, the milk, the packing powder, the eggs, the sugar, and the cinnamon at high speed in your blender, until you get a thin, smooth dough.
Now add the crushed pecan nuts and carrot, mix everything at slow speed.
In a frying pan, over a low heat, warm up some coconut oil and pour 2 tablespoons of the ready dough in the center of the pan.
Let cook slowly for a few minutes then turn the pancake on the other side, always over a low heat so that the packing powder could rise well!
And now you will have your super tender carrot cake like pancakes!
