SUMMER ROLLS WITH PEANUT SAUCE

 

Ingredients for 4 people:

For the peanut sauce

  • 1 big tablespoon peanut butter
  • 6 tablespoons rice vinegar
  • 6 tablespoons peanut oil
  • 3 teaspoon Fish sauce, also called Nuoc-mâm
  • 1 citronella stick
  • juice of ½ a lime
  • salt

After you have squeezed the lime and cut the citronella stick into small pieces, in a bowl- mix all the ingredients, using the help of a fork.

 

The essential for summer rolls

  • 12 rice papers
  • 150 gr rice noodles
  • 1 bunch fresh mint
  • 1 bunch fresh coriander

 

Extra optional Ingredients to choose:

cucumber, carrots, soybean sprouts, dehydrated mushrooms “ears of Judah”, mango, fresh spinach, …

 

Start by cooking the rice noodles in the boiling water, following the instructions inscribed on the package. Our small tip to avoid to get the noodles too well done, is to submerge the noodles in the boiling water, but then cut the fire/heat of your stove.

During this time, cut all the fruits and vegetables into thin sticks of approximately 5-6 cm in length. And then, for example, put all of them on a wooden cutting board.

Cut all the fresh herbs.

Drain the rice noodles and put in a bowl.

Then, prepare a big bowl of cold water, that will serve you to moisture the rice paper.

Once you have all your ingredients ready and close by you can start making the summer rolls …It’s the most delicate step. I have to confess, I had to do it several times before I finally got them nice and photogenic^^!

So, let’s do it: On a plastic board, put a rice paper, then dip your fingers into the water and moisture the rice paper on one side, then turn it over and moisture the other side.

Next, put the ingredients from the wooden board to the rice paper (put the ingredients on the middle and lower part of the paper), starting with the herbs and ending with the noodles and other ingredients. It is necessary to form the ingredients into a very compact pile, of approx. 6 cm in length. But, attention, do not put too many ingredients, so you could close the rice paper well.

Finally, close the paper by folding the edges of the left and right towards the center, and begin to roll the rolls, starting at the bottom, and going back up. The trick is to tighten the roll while rolling it, so it looks good and tight! It’s not easy … I know!

 

But it is soooooo delicious when it’s done!

 

To finish- dip your summer rolls into your peanut sauce!

 

It’s fresh, healthy, and so good!
