Risotto Brussel sprouts and green peas
For 4 persons
- 80g parmesan cheese
- 12 brussel sprouts
- 80g frozen green peas
- 20g olive oil
- 1 onion
- 300g risotto rice
- 600g of water
- 180g of white wine
- 1 vegetable cube
- 2 tablespoon of rice cream
- 4 cherry tomatoes (decoration/garnish)
We made it with our Thermomix machine but if you don’t have one don’t worry you can do it with a pan.
First, you need to grind your block of parmesan. Put it in your thermomix , 15 seconds/ vit 8.
Reserve it in a bowl. (You can buy pre grounded parmesan)
We need to cut the onion in small pieces so we put it in our machine, 5 sec/vit 6.
When it’s done we add the olive oil (20g) and warm it up, 3min/120°c/vit 1.
During this time, we clean up and cut up the brussel sprouts in two.
When the onions cooked, we add the brussel sprouts and the rice ( 300gr). Program: 2min /90°C/vit 1
Add the water, white wine, 1 vegetable cube , salt and pepper, 18min/100°C/setback position/ Vit 1
When it’s done add the frozen peas, parmesan and rice cream and mix it with a tablespoon.
