Cashew ricotta cheese
For 1 big bowl
Ingredients:
- 250 gr cashews (previously soaked in the water > at least for 3 hours > then drained)
- 200 ml water
- juice of 1 lemon
- 1 garlic clove
- flavored salt (with herbs)
Put all the ingredients in your blender, and grind everything at medium / high speed. To get a grainy texture like ricotta has, you do not have to mix too hard.
If the texture stays too liquid, add some more cashews.
