Cashew ricotta cheese

 

For 1 big bowl

Ingredients:

  • 250 gr cashews (previously soaked in the water > at least for 3 hours > then drained)
  • 200 ml water
  • juice of 1 lemon
  • 1 garlic clove
  • flavored salt (with herbs)

Put all the ingredients in your blender, and grind everything at medium / high speed. To get a grainy texture like ricotta has, you do not have to mix too hard.

If the texture stays too liquid, add some more cashews.

Et voilà!
