Homemade brioche Bread rolls
For 10-12 rolls
Ingredients:
For the brioche bread:
- 200 ml almond milk
- 70 gr raw cacao butter, 100% cacao
- 30 gr fresh yeast (not bio)
- 100 ml hot water
- 500 gr wheat flour
- 80 gr brown sugar
- ½ teaspoon of salt
Start by heating the water in a saucepan or a kettle. In a big salad bowl, put the fresh yeast, add the hot water and mix well with a whip.
Then, in a small saucepan, melt the cacao butter over low heat.
Now put all the ingredients in the salad bowl as well as the butter and the yeast. Mold well with your hands until you get a homogeneous ball of the brioche dough.
Then, cover the salad bowl with a clean tissue and let the dough to rise at least for 1 hour.
After that, you can start the filling and shaping!
For the filling:
For the garnish, you can put whatever ingredients you would love to have on your brioche … We used:
- brown sugar
- pieces of chocolate of the brand LoveChock
- dried fruits: we put some hazelnuts
- cacao powder
- honey
But, if you want, you can put for example instead of the chocolate chips candied fruits, almonds, melted chocolate, brown sugar, cinnamon, … All in all, you can make it in your own way, according to your tastes!
Now, to shape the rolls, start by preparing a baking paper or a silicone cooking sheet on your workspace (or just some flour, just like the good old times ^^).
Spread on it the brioche dough with the help of the kitchen roller until it gets flat ( approximately 1 centimeter thick), now you can put on the top the different ingredients you chose.
After that you just have to roll the dough, forming a big roll, which you need to cut into equal parts- about 5 cm in width.
To finish, in a previously oiled oven dish (for example with some coconut oil), place the small brioche rolls side by side.
Cover again your dish with a clean cloth and let it rest for at least 1 hour.
Just before the last stage, preheat your oven to 180°C.
Put the dish in the oven and bake for approximately 45 minutes.
You can check if the brioche dough is cooked by sticking a fork or toothpick in the center of it; if it comes out clean, the rolls are ready to eat!
Before serving, we added a spoon of honey on the top of each of roll! Yummy!
