Chia pudding with chocolate and banana

 

For 4 people

Ingredients:

  • 60 gr chia seeds
  • 70 gr crushed dark chocolate
  • 1 banana
  • 500 ml coconut milk
  • 30 gr coconut sugar from the brand Tropicai

 

In a saucepan, start by warming over at low heat the coconut milk, add the pieces of chocolate, the sugar and mix slowly using a whip.

In a bowl, crush (using a fork)  ½ a banana and put it also in the saucepan. Mix again until everything blends.

Now put the mixture into a big glass jar and let it cool down. Once the mixture is cooled, you can add the chia seeds (which lose the virtues in contact with hot …) and stir energetically with a spoon. Make sure that the chia mixes really well with the rest.

Then, put it in the refrigerator overnight. To avoid the risk that the chia seeds stay compact, do not hesitate to mix several times more before going to sleep.

To serve, cut some fine slices of banana and put them inside a small glass and add the chocolate pudding slowly on the top. If it’s too cold and compact you can leave it at room temperature for 1 hour before serving.
