Red lentils and carrot soup with curry
For 4 people
- 500 gr carrots
- 300 gr raw red lentils
- 1 onion
- 1 dash olive oil
- 1 vegetable stock cube
- 1050 ml mineral water
- 2 teaspoons yellow curry
- salt & pepper
- some croutons
Start with washing and peeling the carrots, and cut them into slices.
Then peel and slice the onion into the thin dices and fry it in a big saucepan with the olive oil for 5 minutes, over medium heat.
Now add the slices of carrots, the red lentils, the vegetable stock cube, and water.
Flavour with salt, pepper, and curry, cover it and let it simmer for approximately 30 minutes.
To finish just mix everything carefully!
Serve it hot! We also add some organic garlic, and parsley croutons to add the crunchy touch!
