Red lentils with coconut milk and rice
For 4 people
Ingredients:
- 50 ml sunflower oil
- 250 gr raw red lentils
- ½ onion
- 1 yellow pepper
- 1 red pepper
- 350 ml coconut milk
- 250 ml mineral water
- 250 gr mixture of whole rice
- salt & pepper
- some coriander (for the garnish)
- some crushed peanuts (for the garnish)
- the juice of ½ a lime
Start with washing and cutting the onion and the peppers into small cubes.
In a wok, warm slowly the sunflower oil and then fry the pieces of onion.
Then, add the peppers and cook over the medium heat approximately 7-10 minutes, mix slowly with a wooden spoon.
Now add the red lentils and cook for another 5 minutes before adding the coconut milk and the water. Flavour with salt and pepper.
Let simmer for 25 minutes and move the mixture often (do not overcook, otherwise the red lentils might soften and turn into a puree ^^).
Meanwhile, in a saucepan boil the water and cook the rice by following the instructions inscribed on the package.
To finish, garnish your dish with some fresh coriander, some crushed peanuts and a little bit of lime juice!
