Spicy edamame, the perfect healthy snack
For 2 people
- 160g edamame (soybeans, can buy frozen from the Asian grocery stores)
- 1 teaspoon chili pepper-flavored coconut oil from the brand Tropicai
- A few pinches of coarse salt
Start by cooking the edamame, either with steam (Thermomix – Varoma vit. mode 1 – 20 min) or in boiling salted water, 5 minutes is enough. They are ready when the beans will get softened but not dark green. 🙂
In a hot frying pan, put one teaspoon of the coconut oil and toast your edamame until they get lightly brown.
Serve them hot or lukewarm with some coarse salt. 🙂
Be careful, you do not eat the pods, you have to eat only the small green beans inside. To do so, put an edamame in your mouth but keep holding it by the tip and bite with your teeth, now pull the pod back out, but so that the beans and spices will stay in your mouth.
