Quiche with beetroot, fresh basil, and feta cheese
For 4 people:
- 1 short pastry dough
- 4 eggs
- 2 large beetroots
- some large leaves of fresh basil
- 100 ml rice cream
- 50 gr feta cheese
- some oregano
- salt & pepper
Heat the oven to 180°C.
Set the dough in a pie/cake tray and make into it some holes with a fork.
In a large bowl, beat the 4 eggs, add the salt & pepper, oregano, and rice cream. Mix it well!
Cut the beetroots into slices.
Wash and dry the basil leaves.
Now, simply place the beetroots on the dough, in a circle. Add the basil leaves, the egg mixture, and on the top sprinkle the feta cheese. If you want you can also roll the edge of the dough, to make it look nicer, before baking it all for about 40-45 minutes.
Et voilà, it’s really fast and delicious!
