Tabbouleh with raw vegetables and leek sprouts
For 3-4 people :
- 200 gr of whole grain semolina (couscous)
- 200 ml organic tomato sauce
- 200 ml of water
- 1 tomato
- 1/2 cucumber
- 1/4 red pepper
- 1/2 half onion
- Some flat-leaf parsley
- about 30 mint leaves
- 85 gr of corn
- juice of 1 lemon
- 1 handful of leek sprouts
- 5 tablespoons of olive oil
- Salt & pepper
Start by heating the water to a boil.
Then, on a plate, put the semolina, add the tomato sauce, the olive oil, the lemon juice and mix everything with the help of a fork. Then gently pour the hot water over it, so that the semolina would be absorbed. Stir with a fork. Let cool down, and set aside.
Then wash the cucumber, pepper, and tomatoes before cutting all the vegetables into cubes.
Chop the parsley and mint.
Add all the chopped vegetables and herbs to the couscous. Season with salt, pepper and mix everything.
Serve chilled by adding some leek sprouts that will perfectly fit with your tabbouleh!
