Vegetarian burger with Portobello mushrooms
For 2 people:
Ingrédients :
For the mango guacamole:
- 1 avocado
- ¼ of onion
- 1/2 of mango
- 10 ml lime juice
- some fresh coriander
- salt & pepper
First peel the mango, onion, avocado, and dice them.
Put all the ingredients in the blender and mix at medium/high speed for about 45 seconds.
Set aside in a bowl.
For 2 burgers:
- 2 hamburger buns with sesame seeds
- 2 slices vegan cheese (or any sliced cheese of your choice)
- 2 giant portobello mushrooms
- a few wheat salad leaves
- 1 onion
- some olive oil
- ½ tomato
Heat the oven to 180°C.
Place the portobello mushrooms into an ovenproof dish, on the cooking paper and sprinkle on the top of them some olive oil, and salt & pepper.
Bake for about 20 minutes.
Meanwhile, cut the onion and tomato into rings.
Then, in a frying pan, heat the olive oil, and add the onion rings. Cook until they become golden brown.
You can also reheat the burger buns for a few minutes to make them warm and crispy.
Now all you have to do is to prepare your vegetarian burgers!
To do that, place on the lower half of the bun: a few salad leaves, a generous spoonful of guacamole, a slice of tomato, the portobello mushroom and some caramelized onions.
On the top put the other half of the bun and voilà- the burger is ready!
And for dessert, a ball of the Funky Veggie brownie, which will add the special sweet touch (but only with natural ingredients and sugars) and above all, it gives the energy you need to last till the end of the day!
