Toast with fresh pesto, raw vegetables and sprouted seeds
For 4 toasts / 2 people:
For the pesto:
- 60gr rocket
- 20gr fresh basil leaves
- 100ml olive oil
- 1 garlic clove
- 1 tablespoon of freshly squeezed lemon juice
- 35gr Parmesan cheese
- salt & pepper
Put all the ingredients in the blender and mix them at maximum speed.
The mixture must be well blended to get the right texture of pesto without pieces. And if you fancy having it even more liquid, just add some olive oil.
And here you are, the homemade pesto, quick and delicious!
For the toast:
- 4 slices whole grain or cereal bread
- ¼ of cucumber
- 1 carrot
- 1 tomato
- a mixture of Germline germinated seeds (here we used the organic protein mixture- based on chickpeas, lentils, fenugreek, and pink radish sprouts)
- some black sesame seeds (optional/ for garnishing)
Wash the vegetables, peel the carrot, remove the cucumber seeds and the heart of the tomato.
Then cut the carrot into sticks, the cucumber into slices and the tomatoes into small cubes.
Toast bread slices and on the top spread a generous layer of homemade pesto.
On them arrange all the raw vegetables and sprouted seeds.
Salt & pepper and if you want, add some black sesame seeds!
