Roasted vegetable salad with green tahini sauce
For 3-4 people:
Ingrédients :
- 2 avocados
- 100 g spinach leaves
- +/- 12 small potatoes
- 1 broccoli
- 1 bunch of radishes
- 1 garlic clove
- 2 large sweet potatoes
- 120 ml virgin olive oil
- Salt & pepper
- Some sesame seeds and black sesame (to decorate)
- Some onion-beet crackers from the brand Kokoji (optional)
Green tahini sauce :
- 1 bunch of parsley
- 4-5 sprigs of fresh basil
- 2 tablespoons tahini
- 1 garlic clove
- juice of 1 lime
- 4 tablespoons virgin olive oil
- 125 ml mineral water
- Salt & pepper
Start by heating the oven to 180°.
Wash all vegetables.
Cut potatoes and radishes into 4 pieces, broccoli into small bunches, garlic clove into small pieces and sweet potatoes into sticks (like fries).
Then, put all the pieces of the cut vegetables in a bowl (except the sweet potato stick)s. Season them with 100 ml olive oil, salt and pepper, and mix evenly with a spoon.
Now place the seasoned vegetables and half of the sweet potato chips fries on the baking tray of the oven (previously covered with baking paper). Spread them evenly and make sure there is some space between them. Put them in the top part of the oven, so they would get golden brown..
Place the remaining sweet potato sticks on the other baking tray, also covered with baking paper. This tray can be placed below the first one.
Cook for about 35-40 minutes, halfway through baking, turn the vegetables around to ensure even cooking.
Meanwhile, cut the avocado into strips.
Then place some spinach leaves and the avocado cuts on the plate.
Sprinkle them with normal and back sesame seeds.
To prepare the green tahini sauce, put all the ingredients in the blender and mix at maximum speed. If necessary, scrub the sauge from the sides of the blender and repeat the operation. Continue until the sauce has a very smooth texture.
Finally take the roasted vegetables, and the sweet potato chips out from the oven.
Prepare the plates. Season them with the green tahini sauce and you can serve them with some Kokoji onion-beet crackers.
